Our Story
In 2019, after years of dreaming about establishing a craft distillery in southern Ontario, Craig Mann was studying distillation techniques in Niagara-on-the-Lake.
During the course of these studies, Craig experimented with a wide variety of botanicals, distillation techniques, and specialized equipment. Through this process, one thing became very clear: the ingredients you use, combine and experiment with define your product.
Two years later, he was completing the first run on his own distillery equipment in Brantford, Ontario - Craig’s hometown, and one defined by a history of local manufacturing, hard work, resilience and community.
What started with three core products has expanded to over 15 varieties of spirits, along with a range of bitters.
Our Space
The Distillery includes a Tasting Room, Cocktail Lounge, classroom area, and production areas.
In our tasting room, you are able to sample all of our spirits with the assistance of our knowledgeable mixologists who will educate you on each spirit.
Our multi- level cocktail lounge is a comfortable space to sit back and enjoy a cocktail with friends and family.
The upper level is where our cocktail classes, group tastings, and competitions take place. Also, perfect for your next corporate event.
Our Process
We have a hybrid 1,100 Litre Pot Still with a 4-plate rectifying column and dephlegmator, a gin basket, and condensing column.
This is paired with a 1,100 litre Mash Tun and two 1,300 litre fermentation tanks, and a variety of mixing and steeping tanks.
Some spirits get bottled right away while others are put into barrels for aging and additional flavour.
With this setup we can produce a very wide range of spirits, from vodka to gin to whiskey.
